Fuentes Culinary Theater The culinary experience at Fuentes is unlike any other. Along with sommelier Paul Sykes, creative chef Julio Gomez prepares a five-course journey to guide guests through a nightly theme, such as traditional Mexican with a twist or islands of the world. The dinner kicks off with a welcome cocktail at 6:30 p.m., but the real fun starts at 7 p.m. Throughout the show, videos & music are played to transport diners to that region. Sykes creates a tailor-made wine pairing for each menu to enhance the meal while explaining his selections through the dinner with Chef Julio.
